Making a sponge cake was one of my first bakery lessons back in school days. During the vacations we would drive down to granny’s place and she would make some amazing cakes that seemed out of this world. Gradually the idea stirred up and we were all up; to learn making the sponge cake.
The ingredients for any sponge cake initially are the same; namely flour, powdered sugar, butter, milk, water, baking soda and eggs. Further; to add on to the flavour vanilla essence, chocolate chips, chocolate syrup, jam, nuts, fruits and a host of other such things can be used.
There is a different set of ingredients for the frosting part; that comes later.
A chocolate flavoured sponge cake needs that extra helping of cocoa powder or some form of chocolate to carry the tag. It was indeed a pleasure to see my first piece bake really well…and it was a chocolate sponge cake!
Simple chocolate sponge cake
Let me tell you the simple steps now. Once you know what the things are you then need to know how much of each is required for a serving of two-four-six and so on. Then you need to understand how to mix each one of them and in what order. Certain words like sifting the flour, cut-and-fold method, shortening need to be understood as per their application.
Finally, you need to know the right equipments for the purpose; the temperature in which it has to be baked and the required time.
White chocolate cake
Many of us are not much into white chocolate in general; isn’t it? Well it was so with me till I bumped into this cake shop last Christmas. I was late for the gathering and had no time to look for my kind of cake. I had to make it fast and had no cue what to do. The pastry chef of the store then took me to their gallery where they had different racks for different kinds of cake.
I was quite taken aback when I noticed this section that was all-white. It had such a majestic appearance that I couldn’t help but pick one from there itself.
Since then somehow I can’t think of anything else apart from a white chocolate cake when it comes to celebration. It indeed reminds that happiness is best realized in its simplest but purest form!
Milk sponge cake
Kids can be real crazy of milk sponge cakes. I have seen it in my aunts’ crèche; any birthday being celebrated a milk sponge cake topped with cherry and strawberry is like the order of the day. It is indeed tempting!
Cooking sponge cake
A sponge cake needs to be prepared like you would iron a piece of silk or nylon fabric…that’s right – gently and with care in the right temperature!
