Coconut Cake – A Healthy Dessert

For a coconut lover, coconut cake is a treat and a double treat if it is a coconut cream cake. A coconut cake is sometimes termed as poke cake because holes are made in it after it has been baked and coconut milk or coconut cream is pored in to them so that it spreads evenly through the cake.

As we all know coconut is good for health. Regular intake of coconut boosts the immune system. And what is a better way then to take it in the form of a cake. Coconut also helps those who are following a low carbohydrate diet plan. In fact, coconut flour is also available for those who have gluten allergy since they can bake a cake without the regular flour.

There are lots of ways to make a delicious coconut cake or a coconut cream cake. Each recipe will have a different taste. The recipe that we are going to share with you is simple and can be tried at home even by a beginner.

Coconut Cream Cake

Ingredients

White cake mix – 18.25 ounces
Vegetable Oil – 1/3 cup
Flaked coconut – 1 cup
Coconut extract – 1 ½ tsp
Coconut cream – 1 can = 14 ounce
Sweetened Condensed Milk – 1 can = 14 ounce
Whipping Cream – 1 cup
Water – 1 cup
White Sugar – 1 tbsp
Eggs – 3

Method

1. First prepare for baking by pre-heating the oven to 350 degrees C.
2. Now take a 9 inch round cake pan and grease it well.
3. To the cake mix, add eggs, oil, water and coconut flavoring and mix it well.
4. Pour the batter in the baking pan and bake till it is ready. This will take about 30 minutes.
5. Once the cake it ready, poke holes into it with a fork or chopsticks.
6. For the next layer, beat coconut cream and condensed milk till smooth.
7. Pour this mixture onto the cake and let it soak in.
8. Put it in the fridge immediately and leave it overnight.
9. Now take the cream in a bowl and beat it till it looks soft. Now add sugar to it and continue beating till it becomes stiff.
10. Spread this onto the cake and sprinkle with flaked coconut.
11. Your cake is now ready to be served.

For cake frosting, simply mix together 1 cup of unsalted butter and 8 ounces of cream cheese in a mixer at low speed. Now add and 5 cups of icing or confectioners’ sugar with 1 tsp of vanilla essence. Whip all the ingredients together until smooth and creamy.

The cake is not only a pleasing sight for the eyes but also a yummy treat for your taste buds. You can also want bake two in one go so that you have something left for yourself.
