Crab-Apple-Watercress Salad

At the occasion of Halloween you might want to make some special recipes. One of them is the Crab, Apple and Watercress salad with walnut vinaigrette. This recipe uses the lump crab which has a fresh and sweet taste and nutty effect of walnuts.

The ingredients for Crab, Apple and Watercress salad with walnut vinaigrette recipe goes like this:

  • 2.5 tbls of white wine vinegar
  • 1 minced shallot, small
  • 2 teaspoons Dijon mustard
  • 2 tbls walnut oil
  • 2 tbls olive oil
  • Salt and pepper for tossing
  • 2 bunches of watercress
  • 1 pound jumbo lump crab
  • 2 thin sliced celery ribs
  • 1 small diced apple
  • 1/3 cup of coarsely chopped walnuts

Directions for making Crab, Apple, and Watercress Salad with Walnut Vinaigrette are:

1. Add vinegar, shallot and mustard and whisk it well to a paste. Than add the walnut, olive oil, salt and pepper and whisk more to get a perfect paste.

2. In another bowl add the watercress with the 3 tbls of the dressing created earlier.

3. Take one more bowl and add the chopped crab, celery, walnuts, apple and the left over dressing and mix well. Season it with the pepper and salt. Now make the serving on a plate by placing the watercress mixture first and than the crab salad on top of it. The amazing recipe is ready to serve.

There many more other salad recipe which goes very good with lump crab. One of them is Jumbo lump crab salad with citrus herb vinaigrette. You have to do two preparations for this recipe, one for the crab salad and one for the vinaigrette. The ingredients for the crab salad are, 1 ounce jumbo crab meat, ¼ cup of diced red onions and red pepper, 2 oz mayonnaise, 1 oz creole mustard, half tbsp lemon juice, 1 tsp basil and parsley, pepper and salt to taste. For the vinaigrette you need ½ cup vinegar and salad oil, 2 tbsp basil, 1 tbsp thyme, lemon juice, and garlic, salt and pepper for taste. The directions for the salad go like this:

  • Add crab meat, red onion, red pepper, basil and parsley into a bowl.
  • In another bowl add mayonnaise, lemon and creole mustard and mix. Now add this paste to the crab mixing bowl and toss the whole mixture very slowly. Also add salt and pepper to taste. Remember not to over toss the mixture as it can break the crab meat.
  • In another bowl add all the vinaigrette ingredients and whisk it well. Add salt and pepper to taste.
  • In a plate keep the salad mixture in the centre and add vinaigrette mix around it and some on the top and serve.
