Delicious and Healthy Vegetarian Recipes for Easter
Easter brings with it a lot of joy and happiness- a celebration of the resurrection of Christ, and we rejoice the victory of good over evil and life over death. And like any other celebration, Easter too is celebrated with a feast, as it marks the end of the period of Lent; bringing the mourning and grief to a joyous culmination. And although Easter is celebrated with honeyed ham and roast beef, it does not mean that the vegetarians cannot have their fill of Easter delicacies. Spring is the time of a variety of seasonal fruits and vegetables and they can be used as ingredients in some mouth watering recipes, and they are in no way lesser than non vegetarian recipes.
Creamy Carrot Soup: This is a delicious recipe with the unique taste of carrots and coconuts making a great combination. You can serve it hot as a meal or chill it for an appetizer. And it’s so easy and simple to make that it hardly even takes any time. You’ll need two or three large carrots, an onion, minced fresh ginger, curry powder, two cups of vegetable broth and an ounce of coconut milk and salt. Mix everything apart from the coconut milk together and allow it to simmer for about 20 minutes or till the carrots are soft. Then allow it to cool, puree in a blender, and put in a pan, this time adding the coconut milk. Add salt to taste and its ready!
Artichoke Pasta: This dish is perfect for both everyday meals and can become a special dish for an occasion just with a few added variations. This filling and healthy dish can be made with very few ingredients. You need ¼ cup of butter, 2 tablespoons of flour, a cup of vegetable broth, half cup of soy milk and two cans of chopped artichokes. All you have to do is boil the pasta in big pan and in another smaller pan, add the flour, butter and broth and simmer till it thickens. Then add the remaining ingredients and cook for five minutes. When done, toss it with the pasta and add some tangy sauce or dries tomatoes and enjoy!
Pralined Sweet: This is a sweet dish made from sweet potatoes, orange juice, pecans and some sugar. It is perfect for both vegetarians and vegans and is just going to take up about forty minutes of your time. You’ll need about 3 or 4 pre- cooked sweet potatoes, 1/3 cup of orange juice, a teaspoon of ginger powder, a pinch of salt, ¼ cup flour, half cup of pecans, some maple syrup, butter or margarine, half teaspoon of cinnamon and half teaspoon of nutmeg. Mash the sweet potatoes and mix it with orange juice and ginger powder in a large pan. In another pan, mix the other ingredients, sprinkle cinnamon and nutmeg powder and bake for 20 to 25 minutes at 350 degrees.
