So this recipe for Orange-Ooze Cupcakes, though a bit tiresome and long but it’s generally the output that matters the most. That’s why they always say, ‘no pain, no gain.’ So relax your muscles and get prepared for this recipe.
First, you have to pre-heat your oven at 350° F and place the muffin tins with paper cupcake liners in a uniform order. In a medium sized mixing bowl, toss in 8 ounces of softened cream cheese, 1 egg and 1/3 cup of white sugar. Also add a couple of drops of food coloring, a drop of red food coloring and chocolate chips. Then use an electric mixer to blend in these thoroughly. Keeps this filling aside momentarily.
In a large mixing bowl, mix in 3 cups of flour, 2 cups of sugar, ½ cup of cocoa, 2 tsp of baking soda and ½ tsp of salt. Keep this aside too. In yet another bowl, pour 2 cups of water, 2 tsp of vanilla, ½ cup vegetable oil and 2 tsp of cider vinegar and stir them well. Then add this liquid to the previous large bowl and carefully intermix and fuse them.
Now pour the cake batter into the cake liners till it is half full. It’s very important that you keep it half full as when the cake bakes, the batter inflates and fluffs upwards fusing with the filling. After you are done filling the cake liners, use 1 tsp of filling for each of the cup cakes. You can use a spoon for this and it will look decorative if you can shape the filling like a crown.
Leave the cup cakes inside the oven for about 25 minutes to be baked soundly! You can use a toothpick, pierce the cakes and then take it out, to check whether the cakes are ready. When they are ready, just get excited and go delirious as the juicy orange filling oozes out to the surface.
Another fun way to enjoy these cup cakes even further is to make use of orange icing on the surface of the cupcakes.
