Halloween Special-Green Goddess Chicken Salad
Halloween was introduced back in some 800’s AC by the Celtics. It is celebrated on 1st November each year and referred as All Hallow’s Day. This festival has its roots from Celts paganism rituals to put the dead at peace. The whole concept of Halloween has been commercialised and celebrated in a very festive manner in America and native countries. People have started their own customs and ways to celebrate this occasion. As a part of the celebration the dinning is also special. There have many favourites at Halloween time including green goddess chicken salad.
The green goddess is basically the name of dressing which goes to many variety of food. The green goddess dressing is a mixture of rich herbs, chervil, sour cream, chives, mayonnaise, lemon, tarragon and anchovies. It was first introduced in the year 1920 in San Francisco at the Palace Hotel. It was meant to give respect to one of the actor of a play called The Green Goddess. The green goddess dressing goes very well with the chicken salad.
The main ingredients for the green goddess chicken salad are:
- 2 tbls sour cream
- 1/3 cup buttermilk
- 1 tbls tarragon, shopped
- 1 anchovy fillet, chopped
- 2 tbls mayonnaise
- 3 1/2 teaspoons vinegar
- 2 diced cucumbers, medium sized
- 4 cups of chopped chicken breast, cooked
- 1 tbls olive oil
- 2 tbls chives, minced
- 1 coarsely chopped avocado
- 1 diced tomato
- 1/4 cup parsley chopped
- 4 cups baby arugula
- Salt and freshly ground pepper
The directions for making green goddess chicken salad are:
1. Add all the ingredients like sour cream, parsley, mayonnaise, avocado, butter milk, 1.5 tbls of vinegar, anchovy and tarragon in a blender and make a thick puree. Take out this puree into a bowl and add pepper and salt. Add the chicken chopped pieces into this mixture and mix it well, such that the chicken pieces are coated with the cream.
2. Now add the left over vinegar and olive oil in another bowl. Add tomatoes and cucumber in it and mix well. Add salt and pepper on the top and mix.
3. Now in plate put baby arugula and put the chicken cream mixture on top of it. At one side of the plate place the tomato and cucumber salad mix.
This green goddess dressing also goes very well with green salad. It is also used as a dip, with sandwiches and also can be mixed with rice. There have been many enhancements and additions to this authentic recipe but some of the people still maintain the originality of the recipe.
