Few of the Low Fat Cookie Recipes

  • Almond Cookies

Ingredients:

½ cup Rice Flour
2 tb Soy flour
½ ts Baking Powder
2 tb Unrefined Vegetable oil
1 egg
2 tb Honey
½ ts Almond extract
1 ts Vanila

How to Prepare

Mix the honey, oils and flavours properly. Then add dry ingredients to the mixture. Roll dough and make ¾ inch diameter balls. Flatten this and bake this at 350 F, for 8 – 10 minutes. Check in between and as soon as these become brown around the edges stop baking. Let them cool before removing the same.

  • Peanut Butter Cookie

Ingredients:

1 cup Creamy peanut butter
1 cup Frozen concentrated apple juice
1 ts vanilla extract
1 cup whole wheat flour
½ ts salt
1 ½ ts baking soda

How to prepare

Mix the peanut butter and apple juice well. Then add the dry ingredients to the same. Dough made might be sticky. With help of ice cream scoop, scoop dough. Dip the fork in the cold water and then wipe dry these and press into cookies. Bake these at 350 degrees for approximately 10 to 15 minutes or till these are lightly brown.

Popcorn Cookies

Ingredients:

3 cup Unsalted Popped popcorn
2 Egg white
¼ cup sugar
¼ ts cinnamon
1 ts vanila

How to prepare

Grind the popcorn in the blender at low speed. Beat 2 egg whites well. Then gradually add sugar to make a meringue. Beat cinnamon, salt, and vanilla. Then fold the ground popcorn and place the rounded tablespoon on the greased baking sheet. Bake the same at 325 degrees for 10 – 12 minutes.
