Recipe from old time Kitchen
Grandma’s old fashioned caramel corn is easy to make if you know what to do and how to cook up great caramel corns. Yes, it takes a few long steps but remember, effort brings perfection and only if you have the patience to let corns puff up in perfect shapes, then only you meet smiling faces.
First you need hot air type of popcorn popper, then a big metal bowl, brown sugar, unsalted butter, baking soda, salt, corn syrup, un-popped popcorns and much more. Make sure that you take the ingredients in right quantity to ensure that you make the perfect mix to let corns appear in their true avatars.
Place the metal bowl on oven and put corns in it. Make sure that all the corns pop up well. Remove the un-popped corns from the bowl. Now you need to preheat it at 200 degrees. Place the saucepan on medium heat and make sure that you use quite a large sauce pan. This is because caramel mixture will require sufficient space to grow in its full colour and size.
Take another saucepan and put brown sugar, corn syrup and butter and let the whole butter salve melt properly. Now add salt to it. Let the caramel mixture boil by turning the heat up. Make sure that there are no lumps of butter in it and that all butter gets soaked inside caramel mixture. After this, you remove the sauce pan from heat and add baking soda to the mixture. Allow the soda to double up the mixture and turn it into brown colour.
Now it is time to pour the entire content of caramel mixture on the corns so that each corn gets coated by the mixture. Now place the caramel corn in metal bowl oven and let it heat at 200 degrees for one hour. When the first 15 minutes pass, turn the caramel corns to let all the corns have even coating. This is to ensure that all corns get uniform coating. If you repeat the process in every 15 minutes for one hour, then at the end you get all corns with even caramel coating.
No doubt, old time caramel popcorn making is a little long process, but you end up making caramel corns that taste just like your grandma’s. It is quite an achievement to get the taste right in traditional way of making. It is true that you will get caramel corns from market, but nothing stands in comparison to old fashioned caramel corn that refreshes old time feelings.
