On a Sugar Free Diet? Enjoy a Sugar free Cake

As the name suggests these are cakes without sugar but sugar free supplements are used instead.

Sugar Free Carrot Cake

Ingredients

Whole Wheat Flour – 2 cups
Frozen orange juice concentrate – 1/3 cup
Water – 1 ¼ cup
Grated Carrot – ½ cup
Chopped Walnuts – ½ cup
Raisins – 1 cup
Chopped dates – 1 ¼ cup
Baking Powder – 1 tsp
Baking Soda – 1 tsp
Cinnamon – 1 tsp
Ground Nutmeg – ½ tsp
Ground Cloves – ½ tsp
Ground Ginger – 1 tsp
Salt – ¼ tsp

Method

1. In a bowl mix flour, baking powder, baking soda and salt and keep aside.
2. Take water in a pan. Add raisins, nutmeg, cloves, ginger, dates and cinnamon.
3. Keep this mixture on flame. Once it boils, lower the flame and let it cook for 5-7 minutes.
4. Now take the grated carrot in another bowl. Pour the water mixture over it and keep it aside to cool.
5. When cool add the orange juice concentrate and walnuts to it.
6. Now add the prepared dry mixture and whip well.
7. Take a baking pan, grease it and pour the mixture into it.
8. Cook for 40-45 minutes
9. Your sugar free carrot cake is ready.
