Recipe for Spicy Asian-Chicken-Salad Lettuce Cups

Spicy Asian-Chicken-Salad Lettuce Cups is a main course/appetizer which requires little effort to prepare. All you got to do is to collect the ingredients required and get going!

  • All you are going to need are ½ cup mayonnaise, 2 teaspoons sambal oelek or Chinese chile-garlic sauce, 1  teaspoon Dijon mustard, 1/2  teaspoon Asian sesame oil, a 2-pound rotisserie chicken- with the bones and skin cast off and the meat chopped in to bite sizes, 1/3  cup  water chestnuts, coarsely chopped, 2  scallions, white and green parts thinly sliced, Kosher salt and freshly ground pepper, 12  Bibb or iceberg lettuce leaves, 1  Hass avocado, peeled and cut into 12 slices and Lime wedges, for serving
  • Start off by mixing the mayonnaise with the sambal oelek, mustard and sesame oil in a medium bowl and stir in the chicken, water chestnuts and scallions and season with salt and pepper. Now spoon the chicken salad into the lettuce cups and top with a slice of avocado. Serve with lime wedges. The chicken salad can be refrigerated for up to 2 days.
  • Spicy Asian preparations like this chicken salad tend to pair best with off-dry (i.e., lightly sweet) white wines. Riesling is one good choice. Washington State is a great resource for lime-scented Riesling. Another wonderful choice is an off-dry Pinot Gris from New Zealand.
  • Peanut butter, soy-sauce and garlic form the base of the Cup spicy peanut sauce. It is used as a condiment, especially good with poultry and also good with Satay. You should allow it several hours of refrigeration time before using, so as to allow the flavors to meld. This is really simple to make and you may just find everything you need in your cupboard.
