Christmas menu is always a special menu and planned with a great care. The Christmas menu is decided for breakfast, lunch and dinner and each menu has to have an entry of deserts. When we talk about desserts there are many options available and the simplest recipes are with the fruits. Some of the recipes with assorted fruits and berries are:
- Assorted Fruit Fritters Recipe: For this recipe you need fruits like 1 mango, 4 bananas, and 4 slices of pineapple. All purpose flour and cinnamon for dusting on the fruits. You need to make a batter with the 2 cups of flour, a tbsp of baking powder, quarter spoon of salt, 2/3 cup of milk and cold water, vegetable oil and icing sugar. Dust the all purpose flour and cinnamon on the fruits. Make a soft batter with the batter ingredients and dip the fruits slices in the batter and fry them in the vegetable oil. Serve the fried fruits on the plate and sprinkle the icing sugar.
- Assorted Fruit In Port Wine Recipe: For this recipe you need 2 16-ounce of canned apricot halves, cling-peach halves, pear halves, which is dipped in heavy syrup. You also need 1 17 ounce of jar light sweet cherries, 1 9 ounce of jar preserved kumquats, 10 maraschino cherries, 5 3 inch long cinnamon sticks, half tsp ground ginger, half tsp ground allspice, quarter tsp whole cloves and 2 cups white port wine. Take out about two and a half cup of syrup from apricots, peaches, and pears. Remove the syrup from cherries and kumquats. Keep aside all the drained fruit and Maraschino cherries. Take a pan and place it on high heat and add the drained syrup. Add allspice, ginger, cinnamon sticks, and cloves in the syrup and bring it to boil. When the mixture comes to boil, low the flame for 5 mins and let it simmer. Now pour this prepared syrup mixture on top of the fruits and add the port wine. If kept in a fridge it can last for 2 weeks.
