Ingredients
5-8 Fresh mint leaves
1 cup Green peas
3 cups Vegetable stock
1 tablespoon butter
2-3 cloves finely chopped garlic
1 Onion chopped finely
Salt to taste
1 cup milk
Blend together peas, a portion of the vegetable stock and the mint leaves adding some water. Heat butter in a pan, add garlic and onion and sauté for two minutes. Add the blended mixture and salt and stir. Bring it to a boil. Cool the pea mixture a little and blend again. Transfer into a pan and add the remaining stock. Add milk and stir and bring to a boil. Serve hot.
Pumpkin & Potato Soup
Ingredients
2 potato cut into cubes
250 grams red pumpkin cut into cubes
2 tablespoons lemon juice
2 cups of water
Salt to taste
1 Bay leaf
1 teaspoon turmeric powder
½ teaspoon crushed black peppercorns
½ cup Cream
Fresh coriander leaves a few sprigs
Take pumpkin and potato in a pan. Add lemon juice, salt, bay leaf and water. Cook on high heat. Once it comes to a boil, cover and cook on low heat till completely cooked. Mash the mixture with a fork. Add more water to make it thinner in consistency. Let the mixture cool. Remove the bay leaf and then blend to make a puree.
Add two cups of water and turmeric powder and mix well. Bring to a boil. Add peppercorns and mix well. Reduce heat and add fresh cream. Garnish with coriander and serve hot.
