Cherry Chocolate Chip Cookies
Ingredients
1 cup cherries
2 cups brown sugar
2 cups all-purpose flour
1 teaspoon vanilla essence
1 large egg
1 teaspoon baking soda
1 tsp salt
1 cup semi-sweet chocolate chips
¾ cup butter-flavoured solid vegetable shortening
Preparation Method
Wash and chop the cherries and soak all the excess liquid on a paper towel. In a mixing bowl, beat sugar and vegetable shortening into cream. Also beat in egg and vanilla essence. In a separate bowl, mix flour, salt and baking soda. Stir in chips and cherries. Add the creamed mixture into this. Spread the prepared mixture as heaps on baking sheets.
Preheat oven to 375degree F. Bake for 8 to 10 minutes. After cooling for 2 minutes, remove to wire racks to cool completely.
You may use the same recipe to make chocolate chip cookies without cherries. The cherry may be replaced with apricots or walnuts, whatever is your choice.
